Black Bean Brownies

In my attempt to eating a gluten and dairy free diet, I have had to get pretty creative with food combos and have had to truly seek out recipes that will meet my new dietary boundaries. Unfortunately my cravings for sweet things, including chocolate, have not subsided. Thus the search for new types of treats has begun. The most recent favored discovery has been black bean brownies. An acquaintance from work made them, and I loved them! I researched the recipe online, and have already made a few batches because the ingredient list is pretty simple, they are fast and easy to make and the best part is that I can totally justify eating them as they are packed with protein, because of the black bean base. So I recommend you try them, at least to have as an option to serve to your gluten-free friends. :)

Hamburger Meat substitute

Ingredients

Directions

  1. In a small bowl, combine the couscous and 1/4 cup hot tap water. Let sit for 5 minutes; fluff with a fork.
  2. In a food processor, puree the egg, sunflower seeds, and 3/4 cup of the lentils until they form a paste; transfer to a bowl. Mix in the carrot, onion, lemon juice, couscous, the remaining lentils, 1/2 teaspoon salt,and 1/4 teaspoon pepper. Form the mixture into four 1/2-inch-thick patties. Refrigerate, uncovered, until firm, 20 to 25 minutes.
  3. Heat grill to medium-high. Oil the grill grate. Grill the patties, turning once (do not press or flatten), until charred and heated through, 4 to 5 minutes per side. Serve on rolls with the desired toppings.

It's Been Far Too Long

Changes since my last post:
  • I started classes to get my music education license from Gordon College. Currently I'm taking three classes: Elementary Methods, Brass Class, and World Music
  • I'm volunteering with the Gordon College Children's Choir on Monday nights. The Spring Concert is this upcoming Sunday, April 1st.
  • I have a pet rabbit and guineau pig: Neville and Remus
  • My roommates have changed. Evie is moving out, and Danielle has moved in.
  • I went to the NAfME (National Association for Music Education) conference in Boston on March 1st and 2nd.
  • I took a day trip to Newport, RI. Megan and I drove down there to see The Elms mansion and do some other sight-seeing/hanging out in downtown.
  • I am training for a race (5k or half marathon). To be decided.
