Polenta and Ricotta

Just had my first experiment with polenta. I did look up a recipe to slightly follow, but this was definitely a Katie-Creation:

Polenta Pie

2 1/2 cups of polenta
1 1/3 cups of ricotta
1 onion
5-7 boneless skinless chicken breasts (depending on size)sliced into pieces
Pasta sauce
Mozarella and Parmesan Cheese

Cook the polenta as directed. After cooking, let 1/2 of the polenta set in one dish and let the rest set in an identical sized dish. Cook the chopped onion and chicken chunks in a pan on the stove. Spice to preferred taste (I like garlic powder and pepper). Drain the left over oil from the chicken and onion. Mix the ricotta until smooth and spread across one of the pans of polenta. Add the chicken and onion on top of the ricotta and sprinkle cheese on top. Pour pasta sauce on top of the cheese. Take the polenta from the extra pan and add the layer on top of the other pan of ingredients, this idea of layers makes the dish pie-like. Layer again with more sauce and cheese. Line with aluminum foil. Set the oven to 350 degrees Fahrenheit, and let the dish gel for approximately 30 minutes. If you'd like the cheese to brown a bit, take the foil off for the remaining 5 minutes in the oven. Let stand for 5-10 minutes.
